Shakshuka
Here is my version of shakshuka with 6 different veg included. Quick, simple and nutritious.
Cooking time: 20 mins
Serves 2
• ½ grated aubergine
• 4 spring onions diced
• ½ courgette cubed
• ½ yellow pepper cubed
• 4 large florets of broccoli chopped
• 1 tin plum tomatoes
• 2 cloves garlic
• 2 tsp sweet smoked paprika
• 1 tsp ground cumin
• ½ tsp cayenne pepper (more if you like it spicy!)
• 4 eggs
• Small handful of chopped parsley
• Small handful of chopped coriander
• Salt
• Freshly ground black pepper
1. Heat a small amount of olive oil in a pan, add grated aubergine, spring onions and sauté until soft.
2. Add courgette, pepper, broccoli, and sauté for another 2 minutes.
3. Add the spices, garlic, and a little salt and black pepper.
4. Add tin of tomatoes, then refill tin halfway with boiling water and add to the mixture.
5. Cook until the sauce has reduced.
6. Make 4 wells in the mixture and crack an egg into each well. Cover and leave until the eggs are cooked as you like.
7. Sprinkle with the parsley and coriander just before you eat.
N.B: This dish is nice on its own or teamed with some wholegrain rice or a little wholemeal sourdough bread! Enjoy.
