Pumpkin and Apple Cake

Ingredients

2 eggs

1 cup coconut sugar

2/3 cup coconut oil

1 tsp vanilla extract

2 cups pumpkin puree

2 cups wholegrain spelt flour

1 tsp bicarbonate of soda

1 tsp baking powder

¼  tsp salt

1 tablespoon cinnamon

2 tsp ground ginger

1 tsp all spice

4 cups apples, cored and diced (skins on)

Method

1.       Preheat oven to 180 degrees

2.       Beat eggs and sugar until thick and creamy

3.       Add coconut oil, vanilla extract and continue beating

4.       Add pumpkin puree and continue beating

5.       In a separate bowl combine flour, bicarbonate of soda, baking powder, salt and spices

6.       Add dry ingredients to wet ingredients and mix until just combined.

7.       Fold in the apples

8.       Pour into a greased tin and bake for about 60 mins or until a skewer comes out clean. After about 30 minutes I put a layer of foil on top to make sure the top doesn’t burn. Just keep an eye on your cake.

9.       Once cooked leave to cool and then turn out.

 

Pumpkins contain tons of beta carotene which is converted by our body into vitamin A. Vitamin A is anti-inflammatory and important for the immune system, our eye and skin health as well as reducing our risk of cancer. Pumpkin is also rich in fibre helping you with your digestion and balancing blood sugar.
