Pumpkin & Apple Protein Muffins

Cooking time: 20-25 minutes
Makes 12 muffins
INGREDIENTS
2 ½ cups wholemeal spelt flour
1 cup pumpkin purée
¾ cup coconut oil melted
¾ cup maple syrup
2 tbsp Purition Pecan & Cinnamon Protein
2 eggs
2 apples cored and chopped into small pieces (keep the skin on)
1 tsp ground cinnamon
½ tsp ground ginger
½ tsp ground turmeric
½ tsp salt
1 tsp bicarbonate soda
METHOD
1. Preheat oven to 180 degrees Celsius
2. In a large bowl mix the flour, Purition protein powder, spices, bicarbonate of soda and salt together.
3. In a separate bowl, whisk the eggs, maple syrup, coconut oil and pumpkin puree together
4. Add the chopped apple to the flour mixture
5. Pour the egg mixture into the flour mixture and mix until fully combined
6. Pour the mixture into muffin cases.
7. Bake in the oven for 20-25 minutes or until a knife comes out clean.
8. Leave to cool and enjoy!
